June's Crab Cakes

After some discussion in ORPCC, I was requested to post my housemate’s super yummy crab cakes. (They even were non-mushy after microwaving for 90 seconds for lunch.)

Cakes:
2T olive oil
2 stalks celery, chopped
2/3 c finely chopped onions
1 lb lump crabmeat
2 2/3 c bread crumbs
1/4 c chopped chives
2T chopped parsley or fresh cilantro
6T all-purpose flour
3 large eggs

*Opt: additional vegetables, chopped fine

1. Saute all veggies to tender
2. In large bowl, combine crabmeat, 2/3 c breadcrumbs, chives, parsley, 1/2 cup “sauce” (see below)
3. Mix and mold 12 cakes.
4. Chill minimum 1 hour (can be stored at this point)
5. Bread (flour,eggs, breadcrumbs) and fry in vegetable oil (2T in skillet) 3 min/side

Sauce
Fresh basil leaves
1 1/2 c mayo (or Miracle Whip)
2T mustard
1-2 t lemon
1/4 t cayenne pepper

1. Chop basil and combine all ingredients to make sauce. Use 1/2 c in cakes and refrigerate rest. Serve with cakes
